History :
The company was created in May 1994. At this time, caramel had stopped
being manufactured in Isigny. The town, in collaboration with the
Isigny dairy cooperative, decided to enlist the services of a professional,
Daniel PALIX, who took the initiative of re-launching the production
of Isigny Caramel.
At the beginning, the company employed 5 people and produced 50 kg
of caramel per day.
Today, Normandie Caramels is managed by Eric PELTIER, and employs
twenty people, producing 300 tons of caramel per year and constantly
increasing production whilst always preserving the traditional methods.
Our methods :
Now the only company to own the trade name "Caramel d'Isigny",
Normandie Caramels uses only local ingredients: the whole milk, butter
and cream we use in our products all come from the local dairy cooperative.
Methods of production remain traditional: the various ingredients
are added to the copper pans, where they are gently and slowly mixed
and cooked.
The choicest ingredients such as butter or veritable Isigny cream
(with a guarantee of origin), are only added at the end of the cooking
process to preserve their delicate flavour.

Our products are, for the most part, sold through bakeries,
patisseries, confectioners, and delicatessens... as well as by wholesalers
(for retailers and professional chefs)
